Today I Wish to chat about Kombucha. Which is obviously utterly unrelated to these Banana Oatmeal Cookies, however I understand you won't mind.

Let me begin by saying that my husband beverages apple cider vinegar mixed with warm water daily to reduce inflammation or anything like that.

He claims it's magical. I claim it's nasty.

While I understand this will seem dramatic (because it is)I actually dry heave at the sight and odor of the early ritual on a daily basis. He loves that around me.

Based upon this reaction, one would believe that I would stay far away from Kombucha, correct? I suggest, after all, it surely has a vinegary tang.

However, for whatever reason, I keep trying it. I Need to like it SO DANG BAD.

They have the ideal quantity of banana taste and a lovely chewy texture thanks to its oats. The chocolate chips are simply an added bonus.

I home like these biscuits somewhat about the side, therefore I inhale them for 9 or 10 minutes. If you prefer these to be cooked through, I would shoot for 10-11 seconds.

YIELD: about 30 cookies PREP TIME: 10 minnutes COOK TIME: 10 minutes



1/2 cup unsalted butter, at room temperature

1 cup packed light brown sugar

1 large egg

3/4 cup mashed ripe bananas (about 2 medium)

1 1/2 teaspoons pure vanilla extract

1 cup pops flour

1 tsp baking soda

1 tsp salt

2 tsp ground cinnamon

3 1/4 cup old fashioned oats


Preheat oven to 350°F. Line baking sheets with parchment paper.

From the bowl of a stand mixer fitted with the paddle attachment, or in a big bowl using an electric mixer, beat the butter and sugar till light and fluffy, about 3 minutes.

Scrape down the sides of the bowl and then blend in the egg until completely incorporated. Scrape down the sides of the bowl again and add the mashed bananas and vanilla.

Gently add the the flour mixture to the banana mixture and blend until just combined.

Scrape the sides of the bowl and stir to recombine.

Stir in the oats and chocolate chips and blend until incorporated.

Use a medium cookie scoop (approximately 1.5 tablespoons) to scoop the dough on prepared cookie sheets leaving about 2 inches between each cookie.

Bake in preheated oven for about 9-11 minutes.

Remove cookies from the oven and then gently press on the tops of each cookie using the bottom of a drinking glass. Considering these cookies don't spread considerably, this can give them a traditional cookie form.
